Ingredients
  

Fish
  • 4 white fish fillets cod or tilapia
  • 1 cup breadcrumbs panko preferred
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp lemon juice fresh

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C) and line baking sheet with parchment.
  2. Pat fish dry and season lightly.
  3. Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Drizzle fish with olive oil and lemon juice.
  5. Press fish into crumb mixture until coated.
  6. Place on baking sheet and drizzle lightly with oil.
  7. Bake 10–12 minutes until golden and flaky.

Notes

Use panko breadcrumbs for extra crispiness. Do not overbake.
