  • 1 sheet frozen puff pastry thawed but cold
  • 4 oz Brie cheese rind on
  • 1 medium firm apple (e.g., Honeycrisp)
  • 1 tbsp fresh lemon juice
  • 2 tbsp honey plus more for drizzling
  • 0.25 tsp ground cinnamon
  • 2 tbsp walnuts or pecans finely chopped
  • 1 tbsp fresh rosemary finely chopped
For Assembly
  • 1 large egg
  • 1 tbsp water
  • All-purpose flour for dusting
  • Flaky sea salt for garnish, optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Whisk egg with 1 tbsp water to make an egg wash; set aside.
  2. Dice the apple into 1/4-inch cubes. Toss in a bowl with lemon juice, 1 tbsp honey, and cinnamon. Cube the Brie into 1/2-inch pieces.
  3. On a floured surface, lightly roll puff pastry to smooth seams. Cut into 24 equal squares (6x4 grid).
  4. Place squares on baking sheet. Center a Brie cube on each, top with a tsp of apple mixture and a pinch of walnuts.
  5. Pinch the four pastry corners together over filling to form a bundle. Brush tops generously with egg wash.
  6. Bake for 14-17 minutes until pastry is puffed and golden brown. Let cool on sheet for 2-3 minutes.
  7. Transfer to platter, drizzle with remaining honey, and garnish with rosemary and flaky salt. Serve warm.

Notes

Bites can be assembled, covered, and refrigerated 1 day ahead. Bake just before serving. Can also be frozen unbaked; bake from frozen, adding 2-4 minutes.
