Ingredients
  

Pork
  • 1.5 lb pork tenderloin
  • 1 cup apple cider
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
Sweet Potatoes
  • 2 lb sweet potatoes peeled and cubed
  • 0.5 cup cream or milk

Method
 

  1. Boil sweet potatoes until tender. Drain and mash with butter and cream.
  2. Season pork and sear in olive oil until browned on all sides.
  3. Sauté onion and garlic in the same skillet.
  4. Add apple cider and mustard, return pork, and simmer until cooked through.
  5. Reduce sauce to a glaze, slice pork, and serve with mashed sweet potatoes.

Notes

Use fresh apple cider for best flavor.
