Ingredients
  

Muffin Batter
  • 1.5 cups whole wheat flour
  • 0.5 cup protein powder vanilla or unflavored
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 2 apples peeled and diced
  • 2 eggs large
  • 0.5 cup Greek yogurt
  • 0.33 cup honey or maple syrup
  • 0.25 cup unsweetened applesauce
  • 0.25 cup melted coconut oil
  • 1 tsp vanilla extract
  • 0.25 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Whisk dry ingredients together in a large bowl.
  3. Mix wet ingredients in separate bowl until smooth.
  4. Combine wet and dry ingredients gently.
  5. Fold in diced apples.
  6. Divide batter into muffin tin.
  7. Bake 18–22 minutes until toothpick comes out clean.
  8. Cool on wire rack before serving.

Store in airtight container up to 3 days or freeze up to 3 months.
