Method
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- Whisk dry ingredients together in a large bowl.
- Mix wet ingredients in separate bowl until smooth.
- Combine wet and dry ingredients gently.
- Fold in diced apples.
- Divide batter into muffin tin.
- Bake 18–22 minutes until toothpick comes out clean.
- Cool on wire rack before serving.
