Ingredients
  

Brunch Stack
  • 4 slices thick-cut bread toasted
  • 4 eggs large
  • 2 cups spinach fresh
  • 1 cup shredded cheese Gruyère or Swiss
  • 2 tbsp butter
  • 0.25 cup milk or cream
  • 1 tsp Dijon mustard
  • to taste salt and pepper

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Toast bread slices until golden and crisp.
  3. Sauté spinach in butter until just wilted. Season lightly.
  4. Whisk milk, mustard, salt, and pepper together.
  5. Layer bread, spinach, and cheese in the baking dish.
  6. Crack one egg onto each stack and spoon milk mixture over top.
  7. Bake 12–15 minutes until whites are set.
  8. Rest briefly, garnish, and serve warm.

Notes

Serve immediately for best texture.
