- Preheat oven to 375°F (190°C) and grease a baking dish.
- Toast bread slices until golden and crisp.
- Sauté spinach in butter until just wilted. Season lightly.
- Whisk milk, mustard, salt, and pepper together.
- Layer bread, spinach, and cheese in the baking dish.
- Crack one egg onto each stack and spoon milk mixture over top.
- Bake 12–15 minutes until whites are set.
- Rest briefly, garnish, and serve warm.
