Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp cloves
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 0.25 cup molasses unsulphured
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. Cream butter with brown sugar and granulated sugar until fluffy.
  4. Add egg, molasses, and vanilla extract; mix until smooth.
  5. Mix in dry ingredients just until combined.
  6. Chill dough for 30 minutes.
  7. Roll dough into balls, coat in sugar, and place on baking sheets.
  8. Bake 10–12 minutes until edges are set and centers remain soft.

Notes

Do not overbake for best chewy texture.
