- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
- Cream butter with brown sugar and granulated sugar until fluffy.
- Add egg, molasses, and vanilla extract; mix until smooth.
- Mix in dry ingredients just until combined.
- Chill dough for 30 minutes.
- Roll dough into balls, coat in sugar, and place on baking sheets.
- Bake 10–12 minutes until edges are set and centers remain soft.
Notes
Do not overbake for best chewy texture.
