Ingredients
  

Chicken
  • 1 lb chicken breast or thighs cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
Bang Bang Sauce
  • 0.33 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 1 tsp sesame oil
Bowl Components
  • 2 cups cooked rice
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cucumber sliced
  • 1 avocado sliced
  • 2 green onions sliced
  • sesame seeds for garnish

Equipment

  • Mixing bowls

Method
 

  1. Cook rice according to package instructions and keep warm.
  2. Toss chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Heat a skillet over medium-high heat and cook chicken for 6–8 minutes until fully cooked and slightly golden.
  4. Whisk together mayonnaise, sriracha, honey, rice vinegar, soy sauce, and sesame oil until smooth.
  5. Divide rice into bowls and top with cooked chicken and veggies.
  6. Drizzle bang bang sauce over bowls and garnish with sesame seeds and green onions.

Notes

Store sauce separately for best texture. Meal prep: keep chicken and veggies separate until serving.
