Ingredients
  

Filling
  • 1 lb ground beef
  • 1 cup shredded cheese cheddar or Mexican blend
  • 0.5 cup onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Assembly
  • 4 large flour tortillas
  • 1 cup vegetable oil for frying

  • Hand mixer or stand mixer

Method
 

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion and garlic, cook until softened. Season with spices.
  3. Remove from heat and stir in shredded cheese.
  4. Spoon filling into tortillas and roll tightly, folding in sides.
  5. Heat oil and fry chimichangas until golden and crispy.
  6. Drain on wire rack and serve hot.

Notes

Chimichangas can also be baked or air-fried for a lighter option.
