Ingredients
  

Filling
  • 1 lb ground beef
  • 0.5 cup diced onion
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup tomato sauce
  • 1 cup shredded cheddar cheese
Assembly
  • 6 large flour tortillas
  • 2 cups vegetable oil for frying

Equipment

  • Large skillet
  • Mixing bowls
  • Tongs
  • Paper towels

Method
 

  1. Brown ground beef in skillet and drain grease.
  2. Add onion and garlic; cook until softened.
  3. Stir in spices and tomato sauce; simmer 5 minutes.
  4. Fill tortillas with beef mixture and cheese; roll tightly.
  5. Heat oil to 350°F and fry chimichangas until golden.
  6. Drain on paper towels and serve with toppings.

Notes

Secure with toothpicks if needed. For lighter version, bake or air fry.
