Ingredients
  

Stew
  • 2.5 lbs beef chuck cut into cubes
  • 3 yellow onions sliced
  • 3 cloves garlic minced
  • 2 tbsp flour
  • 2 tbsp brown sugar
  • 2 tbsp Dijon mustard
  • 2 cups dark Belgian ale
  • 1.5 cups beef broth
  • 2 tbsp apple cider vinegar
  • 2 bay leaves
  • 4 sprigs fresh thyme

  • Wooden spoon

Method
 

  1. Season beef with salt and pepper.
  2. Sear beef in Dutch oven until browned.
  3. Caramelize onions, add garlic.
  4. Stir in flour, sugar, and mustard.
  5. Add beer and broth, scraping pot.
  6. Return beef and herbs, simmer 2–2.5 hours.
  7. Adjust seasoning and serve warm.

Notes

For deeper flavor, prepare a day ahead and refrigerate overnight before reheating.
