Ingredients
  

Cake Batter
  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 0.75 cup Biscoff cookie butter
  • 3 eggs large
  • 2 tsp vanilla extract
  • 1 cup buttermilk
Frosting
  • 1 cup unsalted butter softened
  • 0.75 cup Biscoff cookie butter
  • 3-4 cups powdered sugar
  • 2-3 tbsp cream or milk

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and prepare cake pans.
  2. Whisk together dry ingredients in a bowl.
  3. Cream butter and sugars until fluffy, then mix in cookie butter.
  4. Add eggs and vanilla, mixing well.
  5. Alternate adding dry ingredients and buttermilk to form batter.
  6. Bake 25–30 minutes until set. Cool completely.
  7. Prepare frosting and assemble cake.

Notes

Store covered at room temperature for 2 days or refrigerate for up to 5 days.
