Cake Batter
  • 2.5 cups all-purpose flour
  • 0.5 cup dark cocoa powder
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.75 cups granulated sugar
  • 3 eggs large
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup blackberry puree strained
  • 0.5 cup hot coffee

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. Whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy. Add eggs and vanilla.
  4. Alternate adding dry ingredients and buttermilk-blackberry mixture.
  5. Stir in hot coffee until combined.
  6. Divide batter into pans and bake 30–35 minutes.
  7. Cool completely before filling and frosting with ganache.

Notes

Chill before slicing for clean layers and dramatic presentation.
