Ingredients
  

Vanilla Cookies
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.25 cup milk
Pastry Cream Filling
  • 1 cup whole milk
  • 3 egg yolks
  • 0.5 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
Chocolate Ganache
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy cream

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until fluffy. Add egg and vanilla.
  4. Add dry ingredients alternately with milk to form dough.
  5. Scoop dough onto baking sheets and flatten slightly.
  6. Bake 10–12 minutes and cool completely.
  7. Prepare pastry cream by heating milk and thickening egg mixture. Cool fully.
  8. Heat cream and pour over chocolate to make ganache.
  9. Assemble cookies with pastry cream and top with ganache.

Notes

Chill pastry cream before filling for best texture.
