Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy. Add egg and vanilla.
- Add dry ingredients alternately with milk to form dough.
- Scoop dough onto baking sheets and flatten slightly.
- Bake 10–12 minutes and cool completely.
- Prepare pastry cream by heating milk and thickening egg mixture. Cool fully.
- Heat cream and pour over chocolate to make ganache.
- Assemble cookies with pastry cream and top with ganache.
