Ingredients
  

Main Dish
  • 1.5 lb chicken thighs or breasts boneless, skinless
  • 1.5 cups long-grain white rice
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 1 tbsp tomato paste
  • 1 bay leaf

  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Season chicken generously with Cajun seasoning and smoked paprika.
  3. Sear chicken on both sides until golden. Remove and set aside.
  4. Sauté onion and bell peppers in the same pot until softened.
  5. Add garlic and cook briefly until fragrant.
  6. Stir in rice and tomato paste, coating rice well.
  7. Add chicken broth and bay leaf, then return chicken to the pot.
  8. Cover and simmer until rice is tender and chicken is cooked through.

Notes

Adjust spice level by adding cayenne or hot sauce if desired.
