Method
- Heat olive oil in a large skillet or pot over medium-high heat.
- Season chicken generously with Cajun seasoning and smoked paprika.
- Sear chicken on both sides until golden. Remove and set aside.
- Sauté onion and bell peppers in the same pot until softened.
- Add garlic and cook briefly until fragrant.
- Stir in rice and tomato paste, coating rice well.
- Add chicken broth and bay leaf, then return chicken to the pot.
- Cover and simmer until rice is tender and chicken is cooked through.

Adjust spice level by adding cayenne or hot sauce if desired.
