Ingredients
  

  • 12 oz pasta fettuccine or penne
  • 12 oz smoked sausage sliced
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tbsp Cajun seasoning or to taste

Equipment

  • Large pot
  • Skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente. Drain and reserve pasta water.
  2. Brown sausage in skillet until lightly crispy. Remove and set aside.
  3. Melt butter and sauté garlic until fragrant.
  4. Add cream and simmer, then stir in Parmesan until smooth.
  5. Season with Cajun seasoning and return sausage to pan.
  6. Add pasta, toss, adjust consistency with pasta water, and serve.

Notes

Adjust spice level to taste.
