- In a large skillet over medium-high heat, add olive oil.
- Add chicken pieces and cook 4–5 minutes until browned. Remove chicken and set aside.
- In the same skillet, add onion and bell pepper. Cook 3–4 minutes until softened.
- Stir in garlic, Cajun seasoning, smoked paprika, oregano, salt, and pepper. Cook for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Add pasta and bring to a simmer.
- Reduce heat to medium-low, cover, and cook 10–12 minutes, stirring occasionally, until pasta is tender.
- Return cooked chicken to the skillet. Stir to combine.
- Mix in mozzarella, Parmesan, and butter. Cook 1–2 minutes until sauce is thick and creamy.
- Stir in cherry tomatoes if using.
- Top with parsley and serve hot.
Notes
For extra heat, add cayenne or red pepper flakes. If sauce thickens too much, add a splash of milk.
