- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine whole kernel corn, creamed corn, sour cream, and melted butter.
- Stir in beaten eggs, cheddar cheese, and mozzarella cheese until well combined.
- Fold in Jiffy corn muffin mix, mixing until consistent. Add green onions if desired.
- Pour mixture into prepared baking dish, smoothing top with spatula.
- Bake 45–50 minutes until set and golden brown on top.
- Let cool 5–10 minutes, garnish with paprika and extra green onions.
- Serve hot and enjoy!
Notes
Can add jalapeños or bacon for extra flavor. Make-ahead option available.
