Ingredients
  

Chicken Mixture
  • 2 cups cooked shredded chicken
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp cream cheese softened
  • 1 packet ranch seasoning mix
  • 1-2 jalapeños finely diced
Breading
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1.5 cups breadcrumbs

Method
 

  1. Preheat oven to 400°F (200°C). Prepare baking sheet.
  2. Mix chicken, cheeses, ranch seasoning, jalapeños and spices.
  3. Form mixture into small balls and chill 20 minutes.
  4. Coat in flour, egg, and breadcrumbs.
  5. Bake 18–22 minutes until golden and crispy.

Notes

Chill mixture before breading for best results. Adjust jalapeño quantity to control heat.
