Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp smoked paprika optional
  • 0.5 tsp garlic powder
  • 0.5 cup unsalted butter softened
  • 1 cup sharp cheddar cheese shredded
  • 0.25 cup cream cheese softened
  • 1 egg large
  • 2 jalapeños finely diced, seeds optional

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, smoked paprika, and garlic powder.
  3. In another bowl, cream butter and cream cheese until smooth. Mix in shredded cheddar.
  4. Beat in egg until incorporated. Gradually fold in dry ingredients until soft dough forms.
  5. Fold in diced jalapeños evenly.
  6. Shape dough into 1-inch balls and place on baking sheet, flatten slightly.
  7. Bake 12–15 minutes until edges are lightly golden. Cool on wire rack.
  8. Serve warm or store in airtight container.
