  • 2 cups potatoes diced
  • 1 tbsp olive oil
  • 0.5 lb ground beef
  • 1 onion small, diced
  • 1 bell pepper diced (optional)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp chili powder
  • 4 eggs large
  • 0.25 cup milk optional
  • 1 cup cheddar cheese shredded
  • 2 tbsp parsley or green onions chopped, for garnish

Method
 

  1. Heat olive oil in a skillet over medium-high heat. Add diced potatoes and cook until golden and crisp, about 8–10 minutes.
  2. Push potatoes to the side. Add ground beef and cook until browned, breaking it apart with a spatula.
  3. Stir in diced onion and bell pepper, cooking for 3–4 minutes until softened.
  4. Season with garlic powder, paprika, chili powder, salt, and pepper. Stir to combine.
  5. Whisk eggs with milk (if using). Pour into skillet and scramble until just set.
  6. Add shredded cheddar cheese and stir until melted.
  7. Remove from heat, garnish with parsley or green onions, and serve immediately.

Notes

For extra crispiness, pre-cook potatoes in the microwave for 3–4 minutes before frying. Store leftovers in an airtight container for up to 4 days.
