  • 2 cups cooked chicken shredded or diced
  • 2 cups broccoli florets lightly steamed
  • 2 cups cooked rice white or brown
  • 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 0.5 cup mayonnaise
  • 1 cup shredded cheddar cheese divided
  • 0.5 cup grated Parmesan cheese
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.25 tsp paprika optional
  • 1 tbsp olive oil or butter
  • 0.5 cup breadcrumbs optional, for topping

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Steam broccoli until tender-crisp and cook rice according to package directions.
  3. In a skillet, heat olive oil or butter over medium heat. Sauté onion and garlic until soft and fragrant, about 3–4 minutes.
  4. In a large mixing bowl, whisk together cream of chicken soup, sour cream, mayonnaise, 1/2 cup cheddar cheese, Parmesan cheese, salt, pepper, and paprika.
  5. Add cooked chicken, steamed broccoli, sautéed onion and garlic, and cooked rice to the bowl. Mix until well combined.
  6. Transfer mixture to prepared baking dish, spreading evenly. Sprinkle remaining cheddar cheese and optional breadcrumbs on top.
  7. Bake uncovered for 25–30 minutes until cheese is melted and bubbly. Let rest 5–10 minutes before serving.

Notes

Perfect for meal prep and leftovers. Can be made ahead and baked from frozen.
