- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Steam broccoli until tender-crisp and cook rice according to package directions.
- In a skillet, heat olive oil or butter over medium heat. Sauté onion and garlic until soft and fragrant, about 3–4 minutes.
- In a large mixing bowl, whisk together cream of chicken soup, sour cream, mayonnaise, 1/2 cup cheddar cheese, Parmesan cheese, salt, pepper, and paprika.
- Add cooked chicken, steamed broccoli, sautéed onion and garlic, and cooked rice to the bowl. Mix until well combined.
- Transfer mixture to prepared baking dish, spreading evenly. Sprinkle remaining cheddar cheese and optional breadcrumbs on top.
- Bake uncovered for 25–30 minutes until cheese is melted and bubbly. Let rest 5–10 minutes before serving.
Notes
Perfect for meal prep and leftovers. Can be made ahead and baked from frozen.
