Ingredients
  

Rice
  • 2 cups Japanese short-grain rice
  • 2.5 cups water
Chicken Filling
  • 1 lb chicken thighs boneless, skinless
  • 2 tbsp soy sauce
  • 1 tbsp mirin or honey
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger grated

Equipment

  • Rice cooker or pot
  • Skillet
  • Mixing bowls

Method
 

  1. Rinse and cook rice according to package instructions.
  2. Cook chicken with garlic and ginger until done.
  3. Add soy sauce, mirin, and sesame oil. Simmer until glazed.
  4. Cool filling slightly before assembling.
  5. Shape rice with chicken filling into onigiri.

Notes

Keep hands lightly salted and damp for best shaping results.
