Ingredients
  

Salad Base
  • 2 cups cooked chickpeas drained and rinsed
  • 2 ripe avocados diced
  • 0.75 cup feta cheese crumbled
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh parsley chopped
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper to taste

Method
 

  1. Add chickpeas to a large mixing bowl and lightly mash a few for texture.
  2. Gently fold in diced avocado.
  3. Add feta cheese, red onion, and parsley.
  4. Drizzle with olive oil and lemon juice.
  5. Season with salt and black pepper.
  6. Toss gently until combined.
  7. Serve immediately or chill briefly before serving.

Notes

Best served fresh. Add avocado just before serving for optimal texture.
