Ingredients
  

Salad
  • 2 cups chickpeas drained and rinsed
  • 1 avocado diced
  • 0.5 cup feta cheese crumbled
  • 1 cup cherry tomatoes halved
  • 0.25 red onion finely diced
  • 2 tbsp fresh parsley chopped
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Combine chickpeas, tomatoes, red onion, and parsley in a bowl.
  2. Whisk olive oil, lemon juice, salt, and pepper in a small bowl.
  3. Pour dressing over salad and toss to coat.
  4. Gently fold in diced avocado and feta cheese.
  5. Adjust seasoning and serve immediately.

Notes

Add avocado just before serving to prevent browning.
