- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking soda, and salt together in a bowl.
- Cream butter and sugars until light and fluffy. Add egg and vanilla extract.
- Gradually mix in dry ingredients, then fold in toffee bits.
- Scoop dough onto baking sheets, spacing 2 inches apart.
- Bake 10–12 minutes until edges are lightly golden. Cool completely.
- Melt chocolate with coconut oil until smooth.
- Dip cooled cookies into chocolate and let set before serving.
