Ingredients
  

Chocolate Crust
  • 2 cups chocolate cookie crumbs
  • 0.5 cup unsalted butter melted
Peppermint Mousse Filling
  • 8 oz dark chocolate chopped
  • 1.5 cups heavy whipping cream divided
  • 0.5 cup powdered sugar
  • 0.75 tsp peppermint extract
  • 0.5 tsp vanilla extract

Method
 

  1. Mix cookie crumbs with melted butter and press into tart pan. Chill to set.
  2. Heat half the cream and pour over chopped chocolate. Stir until smooth.
  3. Whip remaining cream with powdered sugar until soft peaks form.
  4. Stir peppermint and vanilla into cooled chocolate.
  5. Fold whipped cream gently into chocolate mixture.
  6. Fill crust with mousse and smooth top.
  7. Chill at least 4 hours or overnight before serving.

Notes

Adjust peppermint extract carefully to avoid overpowering the chocolate.
