Ingredients
  

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1.5 lbs potatoes peeled and cubed
  • 6 cups broth chicken or vegetable
  • 1 bay leaf
  • 8 oz smoked sausage sliced
  • 0.75 cup cream

Method
 

  1. Heat butter and olive oil in a large pot. Sauté onion until soft.
  2. Add garlic, carrots, and celery. Cook until fragrant.
  3. Add potatoes, broth, bay leaf, salt, and pepper. Simmer until tender.
  4. Partially blend soup for a creamy texture.
  5. Brown sausage separately and stir into soup.
  6. Add cream, adjust seasoning, and serve hot.

Partially blending keeps the soup rustic and authentic.
