Ingredients
  

Soup Base
  • 2 tbsp vegetable oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp curry paste
  • 4 cups vegetable broth
  • 2 cans coconut milk full-fat
Dumplings
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 0.75 cup coconut milk

Method
 

  1. Sauté onion in oil until soft, then add garlic, ginger, and curry paste.
  2. Add broth and coconut milk and bring to a gentle simmer.
  3. Mix dumpling ingredients into a soft dough.
