Ingredients
  

Soup Base
  • 1 tbsp oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk full-fat
Dumplings
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup water

Equipment

  • Large soup pot
  • Mixing bowl

Method
 

  1. Sauté onion, garlic, and ginger in oil until fragrant.
  2. Add curry paste and cook briefly to bloom spices.
  3. Stir in broth and coconut milk, then simmer.
  4. Mix dumpling ingredients to form soft dough.
  5. Drop dumplings into simmering soup and cover.
  6. Cook until dumplings are fluffy and cooked through.

Notes

Adjust spice level by adding more or less curry paste.
