Main Ingredients
  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter or coconut oil
  • 1 cup sweetened shredded coconut
  • 1 tsp vanilla extract
  • 0.25 tsp salt optional

Equipment

  • Large pot
  • Wooden spoon
  • Square baking pan
  • Spatula

Method
 

  1. Line a square baking pan with parchment paper.
  2. Melt butter or coconut oil in a large pot over low heat.
  3. Add marshmallows and stir until fully melted and smooth.
  4. Stir in vanilla extract and salt.
  5. Remove from heat and fold in Rice Krispies cereal.
  6. Gently mix in shredded coconut until evenly distributed.
  7. Press mixture into prepared pan without packing too tightly.
  8. Cool at room temperature, then cut into squares and serve.

Notes

For extra coconut flavor, toast the shredded coconut before mixing.
