Method
- Line a square baking pan with parchment paper.
- Melt butter or coconut oil in a large pot over low heat.
- Add marshmallows and stir until fully melted and smooth.
- Stir in vanilla extract and salt.
- Remove from heat and fold in Rice Krispies cereal.
- Gently mix in shredded coconut until evenly distributed.
- Press mixture into prepared pan without packing too tightly.
- Cool at room temperature, then cut into squares and serve.
Notes
For extra coconut flavor, toast the shredded coconut before mixing.
