  • 1 can black beans drained and rinsed
  • 1 can black-eyed peas drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes diced
  • 0.5 cup red bell pepper diced
  • 0.25 cup red onion finely chopped
  • 1 avocado diced
  • 0.25 cup fresh cilantro chopped

Method
 

  1. Combine beans, corn, tomatoes, bell pepper, onion, and cilantro in a large bowl.
  2. Whisk dressing ingredients in a separate bowl until smooth.
  3. Pour dressing over bean mixture and toss gently.
  4. Fold in avocado just before serving.

Notes
