Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 1 lb ground beef or Italian sausage
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp Italian seasoning
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 4 cups broth chicken or beef
  • 8 oz lasagna noodles broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, then stir in garlic.
  3. Add ground meat and cook until browned. Season well.
  4. Stir in tomato paste, crushed tomatoes, and broth.
  5. Bring to a boil, then add broken lasagna noodles.
  6. Simmer until noodles are tender, stirring occasionally.
  7. Lower heat and stir in ricotta, mozzarella, and Parmesan.
  8. Serve hot with fresh herbs and extra cheese if desired.

Notes

Add extra broth when reheating, as noodles absorb liquid over time.
