  • 6 oz brie cheese rind removed and sliced
  • 0.5 cup whole berry cranberry sauce
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh thyme plus extra for garnish
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika

Method
 

  1. Preheat oven to 375°F (190°C). Prepare baking dish.
  2. Cut a pocket into each chicken breast.
  3. Season chicken with salt, pepper, and paprika.
  4. Stuff with brie, cranberry sauce, and thyme.
  5. Secure with toothpicks.
  6. Sear in olive oil with garlic until golden.
  7. Bake 20–25 minutes until internal temp reaches 165°F.
  8. Rest before slicing and garnish before serving.

Notes

Do not overstuff chicken to prevent leakage. Let rest before slicing.
