- Prepare the aromatics by mincing the garlic and finely chopping the shallot. For a milder flavor, rinse them under cold water and pat dry.
- Add the scooped avocado, cilantro, lime juice, garlic, shallot, cumin, salt, black pepper, and optional cayenne to a food processor or blender.
- Pulse the mixture 5-7 times until the ingredients are roughly chopped and combined. Scrape down the sides.
- With the motor running, slowly stream in the 1/4 cup of water. Blend for 30-60 seconds until completely smooth and creamy.
- Taste and adjust seasoning, adding more salt, lime juice, or water to reach your desired consistency and flavor.
- Serve immediately. For storage, transfer to an airtight container, press plastic wrap directly on the surface, and refrigerate for up to 2 days.
Notes
The sauce is best enjoyed fresh but can be stored for up to 2 days. The plastic wrap pressed directly onto the surface is crucial for preventing browning.
