Ingredients

Sauce Base
  • 2 large ripe Hass avocados pitted and scooped
  • 0.5 cup fresh cilantro packed, leaves and tender stems
  • 0.25 cup fresh lime juice from about 2 large limes
  • 1 small clove garlic minced
  • 1 tbsp shallot finely chopped
  • 0.25 cup water plus more as needed
Seasoning
  • 0.25 tsp ground cumin
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper
  • 0.125 tsp cayenne pepper optional

Equipment

  • Food processor or blender
  • Spatula
  • Measuring cups and spoons

Method

  1. Prepare the aromatics by mincing the garlic and finely chopping the shallot. For a milder flavor, rinse them under cold water and pat dry.
  2. Add the scooped avocado, cilantro, lime juice, garlic, shallot, cumin, salt, black pepper, and optional cayenne to a food processor or blender.
  3. Pulse the mixture 5-7 times until the ingredients are roughly chopped and combined. Scrape down the sides.
  4. With the motor running, slowly stream in the 1/4 cup of water. Blend for 30-60 seconds until completely smooth and creamy.
  5. Taste and adjust seasoning, adding more salt, lime juice, or water to reach your desired consistency and flavor.
  6. Serve immediately. For storage, transfer to an airtight container, press plastic wrap directly on the surface, and refrigerate for up to 2 days.

Notes

The sauce is best enjoyed fresh but can be stored for up to 2 days. The plastic wrap pressed directly onto the surface is crucial for preventing browning.
