Sauce Base
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 0.5 cup sour cream
  • 4 oz blue cheese crumbled
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 0.25 tsp black pepper freshly ground
  • 0.25 tsp salt or to taste

Method
 

  1. Melt butter in a saucepan over medium-low heat.
  2. Add garlic and sauté briefly until fragrant.
  3. Stir in heavy cream and bring to a gentle simmer.
  4. Whisk in sour cream until smooth.
  5. Add blue cheese and stir until mostly melted.
  6. Season with lemon juice, salt, and black pepper.
  7. Simmer gently until slightly thickened, then remove from heat.

Notes

Adjust thickness with extra cream if needed. Serve warm.
