Ingredients
  

Soup Base
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 3 cups broccoli florets chopped
  • 2 russet potatoes peeled and diced
  • 3 cups vegetable or chicken broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese freshly shredded

  • Immersion blender

Method
 

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Sauté onion until translucent, then add garlic.
  3. Add potatoes and broccoli; pour in broth and bring to boil.
  4. Simmer until potatoes are tender, about 15–20 minutes.
  5. Blend partially for desired texture.
  6. Stir in milk and cream; simmer gently.
  7. Remove from heat and stir in cheese until melted.
  8. Serve hot with garnish.

Notes

For thicker soup, blend more or simmer longer uncovered.
