Method
- Heat butter and olive oil in a large pot over medium heat.
- Sauté onion until translucent, then add garlic.
- Add potatoes and broccoli; pour in broth and bring to boil.
- Simmer until potatoes are tender, about 15–20 minutes.
- Blend partially for desired texture.
- Stir in milk and cream; simmer gently.
- Remove from heat and stir in cheese until melted.
- Serve hot with garnish.
Notes
For thicker soup, blend more or simmer longer uncovered.
