Soup Base
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 large head cauliflower cut into florets
  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1 cup milk or half-and-half
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
  • 0.5 tsp paprika

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft, then add garlic.
  3. Add carrots, celery, and cauliflower.
  4. Pour in broth and seasonings; simmer until tender.
  5. Blend until smooth and creamy.
  6. Stir in milk and shredded chicken; simmer briefly.
  7. Season to taste and serve warm.

Notes

For dairy-free version, substitute coconut milk and omit cream cheese.
