Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
Sauce
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 6 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp lemon juice
  • 1 cup baby spinach optional
  • fresh parsley for garnish

Method
 

  1. Pat chicken dry and season with salt, pepper, Italian seasoning, and smoked paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
  4. Sauté minced garlic for 1 minute in the same skillet.
  5. Add chicken broth and scrape up browned bits. Simmer for 2 minutes.
  6. Stir in heavy cream and Parmesan. Simmer 3–4 minutes until slightly thickened.
  7. Return chicken to skillet and simmer 6–8 minutes until cooked through.
  8. Stir in spinach and lemon juice. Cook until spinach wilts.
  9. Garnish with parsley and serve hot.

Notes

For extra flavor, add mushrooms or a splash of white wine before adding broth.
