- Pat chicken dry and season with salt, pepper, Italian seasoning, and smoked paprika.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
- Sauté minced garlic for 1 minute in the same skillet.
- Add chicken broth and scrape up browned bits. Simmer for 2 minutes.
- Stir in heavy cream and Parmesan. Simmer 3–4 minutes until slightly thickened.
- Return chicken to skillet and simmer 6–8 minutes until cooked through.
- Stir in spinach and lemon juice. Cook until spinach wilts.
- Garnish with parsley and serve hot.
Notes
For extra flavor, add mushrooms or a splash of white wine before adding broth.
