  • 3 sweet potatoes peeled and thinly sliced
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 tsp fresh thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Grease baking dish.
  2. Slice sweet potatoes thinly.
  3. Melt butter and sauté garlic.
  4. Add cream, milk, and seasonings. Simmer gently.
  5. Layer potatoes with sauce and cheese.
  6. Cover and bake 35 minutes.
  7. Uncover and bake 20–25 minutes until golden.
  8. Rest before serving.

Notes

For extra flavor, add Gruyère or rosemary.
