Ingredients
  

Pasta
  • 12 oz pasta
  • 1 cup ricotta cheese whole milk
  • 1 lemon zested and juiced
  • 0.5 cup Parmesan cheese freshly grated
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Sauté garlic gently in olive oil.
  3. Mix ricotta, lemon zest, lemon juice, Parmesan, salt, and pepper.
  4. Combine hot pasta with ricotta mixture and pasta water until creamy.
  5. Garnish and serve immediately.

Notes

Use whole milk ricotta for best texture. Add pasta water gradually for silkiness.
