  • 2 tbsp olive oil
  • 1 lb chicken breasts cubed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 3 cloves garlic minced
  • 1 yellow onion diced
  • 1 cup orzo pasta
  • 2.5 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 cup spinach chopped
  • 1 tbsp lemon juice
  • 2 tbsp parsley chopped

Equipment

  • Large skillet or Dutch oven
  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken and cook until golden and cooked through.
  3. Sauté onion and garlic until fragrant.
  4. Add orzo and toast lightly.
  5. Pour in broth and simmer until orzo is tender.
  6. Stir in cream and Parmesan until smooth.
  7. Return chicken and add spinach until wilted.
  8. Finish with lemon juice and parsley before serving.

Notes

Add extra broth when reheating to maintain creaminess.
