Ingredients
  

  • 2 lbs ripe tomatoes
  • 2 garlic heads
  • 1 yellow onion chopped
  • 2 tbsp olive oil
  • 3 cups vegetable broth
  • 0.5 cup heavy cream

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Roast tomatoes and garlic with olive oil for 35–40 minutes.
  3. Sauté onion until translucent.
  4. Add roasted vegetables and broth, then blend until smooth.
  5. Stir in cream and simmer 10 minutes before serving.

Notes

Adjust seasoning to taste and garnish with fresh basil.
