  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 0.5 cup parmesan cheese freshly grated
  • 0.25 tsp salt
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Melt butter and olive oil in saucepan over medium heat.
  2. Add garlic and sauté briefly until fragrant.
  3. Whisk in flour to create a roux.
  4. Slowly whisk in milk and cream until smooth.
  5. Cook until thickened, stirring constantly.
  6. Stir in parmesan, salt, and pepper until smooth.
  7. Cool slightly before spreading onto pizza dough.

Notes

Adjust thickness with milk if needed. Use fresh parmesan for best results.
