Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts cut into cubes
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Honey BBQ Sauce
  • 0.75 cup barbecue sauce
  • 2 tbsp honey
  • 1 tbsp ketchup
  • 1 tsp apple cider vinegar

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 425°F (220°C) and prepare a lined baking sheet with wire rack.
  2. Soak chicken pieces in buttermilk for at least 20 minutes.
  3. Mix flour, breadcrumbs, and seasonings in a bowl.
  4. Coat chicken pieces evenly in breadcrumb mixture.
  5. Arrange on rack and lightly spray with oil.
  6. Bake 18–22 minutes until golden and fully cooked.
  7. Simmer sauce ingredients until slightly thickened.
  8. Toss baked chicken in warm honey BBQ sauce and serve.

Notes

For extra crispiness, serve immediately after tossing in sauce.
