Ingredients
  

Zucchini Base
  • 3 zucchini medium, sliced into rounds
  • 0.5 cup parmesan cheese freshly grated
  • 0.5 cup Italian breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice zucchini into 1/4-inch rounds and pat dry with paper towels.
  3. In a shallow bowl, mix parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
  4. Brush zucchini slices lightly with olive oil on both sides.
  5. Press each slice into the parmesan mixture to coat evenly.
  6. Arrange in a single layer on the baking sheet without overlapping.
  7. Bake 18–22 minutes until golden and crispy. Broil 1–2 minutes if desired.
  8. Serve immediately while warm and crisp.

Notes

For extra crispiness, use panko breadcrumbs and avoid overcrowding the baking sheet.
