- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Slice zucchini into 1/4-inch rounds and pat dry with paper towels.
- In a shallow bowl, mix parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Brush zucchini slices lightly with olive oil on both sides.
- Press each slice into the parmesan mixture to coat evenly.
- Arrange in a single layer on the baking sheet without overlapping.
- Bake 18–22 minutes until golden and crispy. Broil 1–2 minutes if desired.
- Serve immediately while warm and crisp.
Notes
For extra crispiness, use panko breadcrumbs and avoid overcrowding the baking sheet.
