Ingredients
  

Potato Base
  • 2 lb potatoes thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp fresh thyme leaves only
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and grease a round baking dish.
  2. Thinly slice potatoes using a mandoline or sharp knife.
  3. Mix olive oil, balsamic vinegar, thyme, salt, and pepper.
  4. Toss potatoes until evenly coated.
  5. Layer potatoes tightly in prepared dish.
  6. Cover with foil and bake 40 minutes.
  7. Uncover and bake 25–30 minutes until golden and crisp.
  8. Rest 10 minutes before slicing and serving.

Notes

For extra crispiness, broil briefly at the end and finish with flaky sea salt.
