Ingredients
  

Potatoes
  • 2 lbs baby potatoes
  • 4 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Parboil potatoes in salted water until just tender. Drain well.
  3. Melt butter and sauté garlic briefly until fragrant.
  4. Toss potatoes with garlic butter, olive oil, salt, and pepper.
  5. Roast in a single layer for 35–45 minutes, flipping once.
  6. Garnish with herbs and serve hot.

Notes

Serve immediately for best crispiness.
