Ingredients
  

Potatoes
  • 2 lbs Yukon Gold potatoes cut into chunks
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Garlic Butter
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tbsp fresh parsley chopped

Equipment

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet.
  2. Toss potatoes with olive oil, salt, and pepper.
  3. Spread potatoes on baking sheet in a single layer.
  4. Roast for 25 minutes, then flip.
  5. Roast an additional 20 minutes until golden and crispy.
  6. Melt butter and sauté garlic until fragrant.
  7. Toss hot potatoes with garlic butter and parsley.
