Ingredients
  

Potatoes
  • 1.5 lbs baby potatoes
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional
  • 2 tbsp fresh parsley chopped

Equipment

  • Mixing bowls
  • Large skillet or baking sheet
  • Colander
  • Wooden spoon or spatula

Method
 

  1. Wash and scrub potatoes. Cut in half if large.
  2. Boil potatoes in salted water for 8–10 minutes until just tender. Drain well.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add potatoes in a single layer and cook until golden and crispy, turning occasionally.
  5. Lower heat, add butter and garlic, and toss quickly until fragrant.
  6. Season with salt, pepper, and paprika. Cook 2–3 minutes more.
  7. Garnish with parsley and serve hot.

Notes

Serve immediately for best crispiness.
