- Wash and scrub potatoes. Cut in half if large.
- Boil potatoes in salted water for 8–10 minutes until just tender. Drain well.
- Heat olive oil in a large skillet over medium-high heat.
- Add potatoes in a single layer and cook until golden and crispy, turning occasionally.
- Lower heat, add butter and garlic, and toss quickly until fragrant.
- Season with salt, pepper, and paprika. Cook 2–3 minutes more.
- Garnish with parsley and serve hot.
