Ingredients
  

Chicken
  • 2 lb chicken pieces bone-in
  • 2 cups buttermilk
  • 2 eggs large
Coating
  • 2 cups all-purpose flour
  • 0.5 cup cornstarch
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Marinate chicken in seasoned buttermilk and eggs for at least 4 hours.
  2. Mix flour, cornstarch, and spices in a bowl.
  3. Dredge chicken thoroughly in flour mixture.
  4. Heat oil to 325–340°F (165–170°C).
  5. Fry chicken in batches until golden and cooked through.
  6. Drain on wire rack and rest before serving.

Notes

Maintain oil temperature for best results.
