- Marinate chicken in seasoned buttermilk and eggs for at least 4 hours.
- Mix flour, cornstarch, and spices in a bowl.
- Dredge chicken thoroughly in flour mixture.
- Heat oil to 325–340°F (165–170°C).
- Fry chicken in batches until golden and cooked through.
- Drain on wire rack and rest before serving.
